We after peeling the roots apply salt for a while and then wash it- this removes the stickiness and then cook it in a frying pan with 4 tbsp oil, onion, tomatoes, red chillies, turmeric, salt , whole cumin seeds, end it up with green herb like mint and parsely . The Elephant Ear where I live grows wild, like a weed, so if you move to a new place and the garden hasn't been tended, there's a good chance it's Elephant Ear which is more rugged than taro.
